My wife gave me this recipe for Peruvian spachcocked chicken with green sauce and I made it, all the while feeling this weird deja vu.

And then I saw this and now realize that deja vu was THIS recipe, which I’d read before.

The only difference was the spachcocking.

It’s an amazing recipe–and those upgraded black beans are delicious.

Oh I knew I had to try this recipe; it had been on my mind for days!! I did decrease the amount of salt and ended up using chicken drumsticks instead. The caramelized onions were a nice touch with the black beans (I just used garlic powder with the beans); didn’t need to use the chicken broth and it was on point. I made two batches – one with onions (don’t know how I missed that part in the recipe) and Ken’s olive oil & vinegar dressing (needed to use it), and one without onions. Not a mayo fan so ended up using nonfat plain Greek yogurt for the green sauce. Next time want to use Mexican sour cream. Used Mexican oregano instead of regular oregano, and chili lime powder instead of paprika. The seasoned chicken juice is finger licking good. Excelente! 👌🏼

I usually cook the onion and garlic for a few minutes, then add the beans and chicken stock, bring to a boil, and simmer for 20-30 minutes. I season with salt or Goya’s Sazon seasoning, and then if you add juices from the roasted chicken, that adds loads of flavor as well!

I understand your confusion, Deb, as the onions aren’t pictured. No, at the end of cooking, you should have a roast chicken with a bed of flavorful caramelized onions on the bottom! I think we may have forgotten that step on the day we photographed this recipe.
